Apple Coffee Cake

Ingredients:
- 2 apples, thinly sliced
- 2 Tbsp b. sugar
- 1 cup tapioca starch, 1 cup white rice flour <–blend, and use 1 1/3 cup
- 3/4 c sugar
- 4.5 tsp b. pwd
- 2 tsp guar gum
- 1/4 tsp salt
- 1/4 c margarine, melted
- 2 eggs, beaten
- 3/4 cup milk
- 2 tsp vanilla
- 1 tsp cinnamon
- 1/3 cup b. sugar
Instructions:
- Butter 8″ sqare baking pan, preheat oven to 325F
- blend apples with sugar and set into pan.
- combine flour blend, sugar, b. pwd, salt, guar gum and set aside.
- Beat together eggs, add margarine, milk, and vanilla.
- add dry ingredients, mix until combined, spread over apples.
- Mix last cinnamon & b. sugar together. Sprinkle over batter.
- Bake 50 - 60 minutes at 325 - 350F, until sides are pulling from edges, and golden brown.
